Great dialogue does at least one of these three things (and preferably, all three): 1. Reveals character, 2. Builds or releases tension, and 3, moves the plot forward.

Part of the thrill of reading is filling in what’s not said. When you feed too much to the reader, it just becomes information, not story. The challenge is in making it simulate real talk, but at the same time, crafting it to the needs of the characters and the story.

In great dialogue, what’s said is only half the story. Often the most powerful lines are the ones that don’t say everything outright. Subtext is the emotional undercurrent, the thing your characters are really saying beneath the words.
